How to make Turkish Gilikli soup recipe?

Turkish Gilikli soup recipe is one of the special tastes of Antalya cuisine. Gilikli soup, also known as “wedding soup” in Antalya, is a very interesting soup made with both tripe and meatballs. If you want to try this soup at home, you can find the ingredients and the steps of making the soup.

Ingredients for making
  • 1 kilogram of tripe
  • 2 cups boiled chickpeas
  • 1 tea glass of rice
  • 1 tablespoon tomato paste
  • 2 spoonful butter
  • 1 teaspoon of red pepper
  • 1 teaspoon salt
For the patties:
  • 250 grams of ground beef
  • 1 teaspoon tomato paste
  • 1 teaspoon of black pepper
  • 6 tablespoons of olive oil
  • Half a teaspoon of salt
For service:
  • 1 lemon
  • 2 tablespoons of mint
How to make Turkish Gilikli soup recipe?

1-Clean the rumen well and wash it with plenty of water several times.

2-Then sprinkle with flour and leave for 25-30 minutes, then wash again.

3-Boil the cleaned rumen well in 2 liters of boiled water.

4-While boiling tripe, add tomato paste, olive oil, salt and pepper to meatballs.

5-Make tiny ball patties from minced mortar that you knead well.

6-Heat the olive oil in the pan and fry the meatballs in the oil.

7-Take the meatballs from the oil and remove them on a paper towel.

8-When the rumen is boiled, chop finely and put it back into the boiling water.

9-Add boiled chickpeas, rice, meatballs, tomato paste, butter, red pepper and salt to the rumen.

10-Continue cooking the soup on low heat until the rice swells.

11-Add lemon juice and mint and serve your soup warm.

12-If you wish, you can flavor it with vinegar and garlic while serving.
