How to make laba (Stuffed Ribs),
Laba Stuffed Ribs recipe is a favorite meat recipe of Antalya cuisine. Also known as rib filling, cooking is somewhat difficult to make at home, but it is a worthy taste. If you want to try the Turkish laba stuffed ribs recipe, you can find its ingredients and steps below.
Ingredients for making laba (stuffed ribs)
- 1 sheep or goat rib (half of the animal hitting the abdominal cavity)
- 1 cup of olive oil
Laba (Stuffed Ribs) for Inner Mortar
- 500 grams of liver
- 1pcs kidney
- 500 grams of ground beef
- 2 cups of rice
- 1 onion
- 1 coffee cup peanut
- 1 coffee cup currant
- 1 cup of roasted almonds
- 1 teaspoon of black pepper
- Half a bunch of parsley
- 2 spoonful butter
- 1 tablespoon of salt
How to make Laba (stuffed ribs) recipe?
1-Put the rice in hot water and let it sit for 20-25 minutes.
2-Chop the liver and kidney into small cubes.
3-Chop the onion and cook until it turns pink in oil.
4-Add liver, kidney and minced meat and continue to roast until it turns color.
5-Add the rice to the lungs after filtering and washing it.
6-Add the peanuts and currants and fry them for another 5 minutes.
7-Chop the parsley finely and add salt and pepper to the mortar and remove from the stove.
8-Carefully cut the rib open like a bag.
9-Fill the rice mortar into the rib without squeezing it and sew the mouth with a needle thread.
10-Use a knife to cut air in the fleshy portions of the ribs 5-6 and open the air hole.
11-Put 1 cup of olive oil in a pot large enough for the rib to fit.
12-Heat the oil and fry both sides of the rib in oil.
13-Add the water to half the level of the meat in the pot, boil for 3-5 minutes and cut the bottom.
14-In this way, cook for 2.5-3 hours until the meat is tender.
15-Cook the rice mortar, which remains close to cooking, with the addition of hot water, like rice.
16-When the meat is cooked, first place the stuffed ribs on the pilaf and serve hot.
