In a large mixing bowl, whisk together the flour, baking powder, salt, and granulated sugar.
In a separate bowl, beat the eggs and then add the milk and vanilla extract. Mix until well combined.
Gradually pour the wet ingredients into the dry ingredients while stirring. Continue mixing until a smooth batter forms.
Heat about 2 inches of vegetable oil in a deep skillet or pot to 375°F (190°C).
Holding a funnel over the hot oil, pour a ladleful of batter into the funnel, covering the hole with your finger.
Position the funnel over the hot oil and release your finger, moving the funnel in a spiral motion to create a lacy pattern with the batter. Fry for about 2-3 minutes on each side, until golden brown and crispy.
Use tongs to carefully flip the funnel cake and cook the other side until golden brown as well.
Once cooked, carefully remove the funnel cake from the oil and place it on a plate lined with paper towels to drain excess oil.
Dust the funnel cake generously with powdered sugar while it's still warm.
Repeat the process with the remaining batter.
